Hi,

I have read the manual, but wanted to confirm, as different information can be found in the internet. Is it possible to have Zwift connected via FE-C and just display data from the trainer on Garmin Edge 520?

It is possible to connect both the device to the trainer as a controllable trainer(ant allows multiple connections), but as both can control the resistance of the trainer, the behavior of the trainer is unpredictable. So, we don't suggest this kind of use.
But if you want, you can use one of the two devices to connect to the trainer as an interactive trainer and the other to connect to the trainer as a simple speed&cadence sensor + a power sensor. In this way all should work properly.
