You have unrealistic expectations for ERG mode, and you have no idea what the human-generated power characteristics are.
Register any ERG training on Qubo, provided that the registration is done with a normal power meter (crank, pedals, etc.). Only then will you find out how a person generates power and how much this power can be variable. Not only on the trainer, but also on the road. It is impossible to maintain the power of 200W as accurately as it looks on the chart of Qubo or Wahoo trainers with enabled reporting of smoothed power (almost a straight line).
